Strawberry Tart Cookies

 
 
So, I had a leftover pie crust from the holidays and came up with
an easy and delicious treat for the boys...
 
 
 
 
I just used the pie crust and some strawberry jelly, plus my
round cookie cutters...
 
 
 
 
I ended up with 8 large cookies and 12-14 smaller cookies...
 
 
 
 
I loved the subtle sweetness, but would've dusted them with a bit of
powdered sugar if I'd had any in the cupboard.
(They tasted a lot like a strawberry poptart.)

Yes please! These look good, and I can imagine the flaky buttery crust with jam. All I've ever done is cinnamon and sugar. May have to try this! Have a great rest of the week.

Excellent idea! I make cookies kinda like this at Valentines, but heart-shaped ones. But using the pie crust is SO easy! And those cuties are cute too. :)

These look yummy. I made some fold over pies out of extra pie dough. I used raisins, nuts and brown sugar.
