It has been soooo warm here. That means it's time for a bit of this...

Baked Asparagus
- 1 bunch fresh asparagus, trimmed
- cooking spray
- salt and pepper to taste
- 2 tablespoons butter
- 1 tablespoon soy sauce
- 1 teaspoon balsamic vinegar
Arrange the asparagus on a baking sheet.
Coat with cooking spray, and season with salt and pepper.
Bake asparagus 12 minutes in the preheated oven, or until tender.
Melt the butter in a saucepan over medium heat.
Remove from heat, and stir in soy sauce and balsamic vinegar.
Pour over the baked asparagus to serve.

Next week is SPRING BREAK here!! I'm pretty excited b/c I get to sleep later and relax a bit longer each day. We have a lot planned and Neil is even taking a day off so that we can all visit Fernbank.

Have you read The Girl with the Dragon Tattoo? If not, you should. I will warn that (for me) it started off a bit slow. After the first few chapters, tho, I was totally hooked.
This week I began Peony in Love and Greater Love. That was just a "lovely" coincidence, by the way.

I LOVE asparagus. I never had it growing up either. I make it almost like that recipe except I haven't tried soy sauce on it, and I LOVE soy sauce, so I'm going to try that next time!
Next week is Spring Break for us too, I can't wait! Have fun!

OMG. I have not bought a new book in ages, and last week I was at Sam's and bought, The Girl With The Dragon Tattoo. I almost gave up on it. I thought it started slow too and all the Swedish words were throwing me off. Now I'm hooked! :)

I love asparagus and I was fortunate enough that we had it growing wild in our backyard - I used to beg my dad not to mow the lawn until late spring so that I could pick the new asparagus. It was tough though - the grass was a wild grass so it would be a foot tall if he waited too long to cut it.
I thought about getting that book but hadn't yet - thanks for the recommendation.

We are HUGE asparagus fans here in our home.
Try this recipe:
Marinate arparagus in Italian dressing. (I like to use Ken's aged romano cheese Italian)
Remove from marinade and wrap in prosciutto.
Place on BBQ grill on low heat and cook until meat is crispy and asparagus is tender.
YUM!

We've had a couple of record-breaking highs lately, but today I heard we're going to get some snow! (Figures.)
We love grilled asparagus, and I had never had it until a year or two ago. Mr.4444 is entertained by the effect of asparagus on his bathroom "experience." (email me if you are dying to know what I'm talking about!)
Although I don't drink (I think I'm allergic), I do love the taste of a Corona with lime (yum). Hope you enjoy many this week :)
